|12 Bacon Slices, Cooked and Crumbled|
|½ Cup Parmesan Cheese, Shredded|
|¼ Cup Chives, Fresh, Chopped|
|1 Iceberg Lettuce, Large Head|

- Stir together Bill’s blue cheese dressing ingredients and place in refrigerator to chill, preferably overnight.
- Cut one large head of lettuce into 6 wedges. Thoroughly wash each lettuce wedge holding together to remain intact, lay on paper towel to air dry. If preparing in advance, cover wedges with paper towel and sprinkle paper towel lightly with cold water, place in plastic bag and put into refrigerator so lettuce remains crisp.
- Pan fry bacon, let cool, then crumble.
- Stir together crumbled bacon, Parmesan cheese and chives. Top each lettuce wedge with Bill’s Blue Cheese Dressing and sprinkle dressing evenly with bacon mixture.
Yield: 6 servings.
