2 Lbs. Velveeta Queso Blanco, ½” Cubes
2 Cans Rotel
1 Jar Pimentos, Diced
2 Jalapenos, Seeded and Finely Chopped
Tortilla Chips, for Serving


  1. Cube the Queso Blanco into ½” cubes and place in a microwavable dish or medium sized pot.  Add Rotel, diced pimentos, and jalapenos. 
  2. Microwave or heat on stove until all cheese has melted and is nice and creamy.  Place in a warming dish. 
  3. Serve with Tortilla Chips

NOTE: I used 4 Tbsp. chopped pickled jalapenos.
