BEEF ENCHILADA DIP

Ingredients

2 Lbs. Ground Beef
½ White Onion, Med, Finely Diced
2 Cloves Garlic, Minced
19 oz Red Enchilada Sauce
1-1/2 Cups Monterrey Jack, Grated
1-1/2 Cups Cheddar Cheese, Grated
Tortilla Chips
Salt and Pepper, To-Taste
Optional Toppings:
Sour Cream  
Avocados, Finely Diced

Instructions

  1. Brown ground beef in a large skillet, with salt and pepper to-taste.
  2. Add in onion and garlic and cook until tender, about 3 minutes.
  3. Stir in Enchilada sauce and top with grated cheeses.  Cover and allow cheese to melt, about 3 to 5 minutes. 
  4. Serve with tortilla chips, sour cream, diced avocados and/or guacamole as additional toppings.

Servings:  8

Variations: For a spicy version use Monterrey Jack Cheese with Jalapeno peppers. I have also used Velveeta Cheese and it makes a creamier dip.
