AVOCADO AND BACON SANDWICH

Ingredients

6 Avocados, Mashed
4 Bacon Slices, Cooked and Crumbled
2 Roma Tomatoes, Chopped
2 Green Onion, Finely Chopped
1 Tbsp. Apple Cider Vinegar
½ Tsp. Ground Chipotle
1 Garlic Clove, Minced
16 Fresh Baby Spinach Leaves
4 Croissants or 8 Slices White or Wheat Bread

Instructions

  1. Fry bacon slices until crispy.  Finely chop or crumble bacon.
  2. Mash the avocados in a  medium size bowl.
  3. Finely chop the tomatoes and green onions. 
  4. Combine the first seven ingredients, stir until fully incorporated.
  5. Prepare sandwiches on white, wheat or croissants with fresh spinach leaves.

Servings:  4 Each
