RED BEANS AND RICE

Ingredients

1 Ham Bone or Ham Hock
1 Sausage
1 Lb. Dried Red Beans
1 Lg. Onion, Chopped
½ Clove Garlic, Minced
1 Cup Green Onions, Chopped
¼ Cup Parsley
2 Bay Leaves
¼ Cup Butter
Salt and Cayenne Pepper, To-Taste

Instructions

  1. Brown some sausage and remove some of the grease. 
  2. Bring beans to a boil again and add all other ingredients. 
  3. Reduce heat and simmer for at least 3 hours, beans should become creamy. 

Serve over hot rice.

NOTE:  The addition of the ham bone adds red color and flavor not possible to achieve otherwise.  Most Cajun cooks like to bring their beans to a rolling boil for a couple of minutes, then let them soak in the same water overnight.
