|1 Ham Bone or Ham Hock|
|1 Lb. Dried Red Beans|
|1 Lg. Onion, Chopped|
|½ Clove Garlic, Minced|
|1 Cup Green Onions, Chopped|
|¼ Cup Parsley|
|2 Bay Leaves|
|¼ Cup Butter|
|Salt and Cayenne Pepper, To-Taste|
- Brown some sausage and remove some of the grease.
- Bring beans to a boil again and add all other ingredients.
- Reduce heat and simmer for at least 3 hours, beans should become creamy.
Serve over hot rice.
NOTE: The addition of the ham bone adds red color and flavor not possible to achieve otherwise. Most Cajun cooks like to bring their beans to a rolling boil for a couple of minutes, then let them soak in the same water overnight.
