Ingredients
| 1 Ham Bone or Ham Hock |
| 1 Sausage |
| 1 Lb. Dried Red Beans |
| 1 Lg. Onion, Chopped |
| ½ Clove Garlic, Minced |
| 1 Cup Green Onions, Chopped |
| ¼ Cup Parsley |
| 2 Bay Leaves |
| ¼ Cup Butter |
| Salt and Cayenne Pepper, To-Taste |
Instructions
- Brown some sausage and remove some of the grease.
- Bring beans to a boil again and add all other ingredients.
- Reduce heat and simmer for at least 3 hours, beans should become creamy.
Serve over hot rice.
NOTE: The addition of the ham bone adds red color and flavor not possible to achieve otherwise. Most Cajun cooks like to bring their beans to a rolling boil for a couple of minutes, then let them soak in the same water overnight.
