CHILLED CANTALOUP SOUP

Ingredients

1 Large Cantaloupe, Peeled, Chopped
3 Cups Orange Juice
1 ½ Tsp. Lime Juice, Fresh
½ Tsp. Ground Cinnamon
¼ Tsp. Salt Garnish:  Sliced Cantaloupe

Instructions

  1. Process first 5 ingredients in a blender until smooth, stopping to scrape down sides as needed.
  2. Transfer soup mixture to a large bowl.  Cover and chill at least 3 hours or up to 3 days. 
  3. Stir just before serving.  Garnish, if desired.

Servings:  About 5 cups

NOTE: Serve in china or floral coffee cups.
